The beautiful and absolutely spreadable crystalised honey option. Crystalised honey is the quiet achiever of the honey world.

Raw natural honey crystalises depending on the nectar and pollen the bees have gathered from different sources. Some plant nectar is very slow to crystalise and others, for example, paperbark, crystalise quite rapidly. Due to the natural crystalisation process we are sometimes sold out of these containers.

Candied or crystalised honey is the formation and growth of sugar crystals in the container. It can store in this state for thousands of years. But if it takes you that long to spread it on your toast, then you are not our target market :).

How to use

Crystalised honey is more easy to spoon or spread than fresh raw honey. It stays on your knife like a well behaved bee. Also great in smoothies, in baking as a natural sweetener, spoon straight onto your breaky, or into your tea.

Description

Our 100% Australian crystalised honey range specialises in raw honey, crystalised raw honey and raw honeycomb. We believe the tastiest and healthiest honey is honey kept in its most natural state with minimal processing.

Our hives are mostly static to each location and therefore our honey will vary in taste, consistency and colour all year round dependent on the flora, weather conditions and season. This is the way we like our local honey to be. Some flowering seasons will crystalise faster than others, which is normal for raw unheated honey.

Created in the hive by the bees, uncapped by hand with a serrated knife, and spun by us the beekeepers we can ensure every step in the process is kept as natural as possible. The crystalisation process happens over time as the sugar cells in the honey start to crystalise. This means we don’t always have crystalised honey available.

Benefits of raw honey

Honey is one of the worlds amazing products. The health benefits of raw honey are extensive. It is a good source of antioxidants that help protect your body from cell damage due to free radicals.

The tiny residue of propolis in raw honey has antifungal and antibacterial properties making it ideal for healing wounds. It is thought that incredible enzymes such as phytonutrients, amylase, glucose oxidase, invertase, diastase and catalese in honey are responsible for the immune-boosting and anticancer benefits. Minimal processing and good storage helps to retain these properties.

Honey also includes small trace amounts of 54 different micronutrients (or, vitamins and minerals):

  • calcium
  • magnesium
  • manganese
  • niacin
  • pantothenic acid
  • phosphorous
  • potassium
  • riboflavin
  • sodium
  • vitamin C
  • zinc

To get the benefits from bee gut flora, please do not heat your honey over 40 degrees, as this will cause the beneficial enzymes to die. It will still be perfectly tasty for cooking or dropping in your tea. So don’t forget to have a teaspoon of raw honey straight from the spoon. It contains 64 calories and 17 grams of sugar in each tablespoon of raw honey, which is a great source of portable energy for runners.
